Binnie's Recipe Corner - Potato Leek Soup

Ingredients

*2 tablespoons of butter ( I used olive oil)
*� pound of leeks, sliced and washed. (that is about 3 large leeks, 4 small ones)
*1 � pounds of potatoes (depending on the potatoes 4-7)
*2 cups of veggie stock or water, (it would probably work with chicken or beef if you prefer.
* 2 cups of milk. (skim works as well as whole or anything in the middle) if you don�t want to use milk just substitute with additional stock
*1 teaspoon of salt. (I never use this because of the stock)
*peper to taste
*pasley to taste


If you want you can add carrots or garlic. I have tried it and they taste good too.

saut� the leeks in butter for 8-10 minutes

add potatoes, stock (and any other veggies you want) bring to a boil, lower heat and allow to simmer for 30 minutes or until the veggies have gone soft. add 2 cups of milk and simmer for 10 more minutes.

if you cut the veggies small you can serve it as is or put it through the blender

peper to taste.
